I went to my friend's house and tried Parmigiana di melanzane, after that I falling love with it. Before I don't like eggplant, but now..Its so deffrent.A lot of recipes i tried but only one which I thing one of the best recipes. Recipes I was taken from book of Allessandra Spisni, one of the famous women from Bologna. She is the owner the school ''La Vechia Scuola Bolognese'', Only one a week she share the recipes on TV in Italy.The famous pasta maker ...ecc...ecc..... I tried it her recipes, not really hard ( and it explain all the trik to make it).And the result.....score 10 from 100 is 90!!!! So lets we try!!!!
Ingridient :
( for 6 person)
150 gr grated pamessan cheese
100 gr fresh mozarella cut cube
for fried eggplant:
flour
1kg eggplant
oil for fired
salt
for tomato sauce:
1 tbs olive oli
2 garlic
1 bottle tomato sauce for pasta
basil
salt, pepper
How to make:
1. Cut egg plant , put in hot water around 30 minutes.
2. Cover eggplant with flour and fried wit max 2 minutes
3 prepare tomato sause, cook all sauce ingridient araound 10 minutes and iff need add water
4 like make lasagna make layer per layer on the pan, ,first layer put eggplant, than cover with tomato sauce , and last with fresh mozarella and parmesan cheese.( make it 3 layers)
5 bake for 20 minuts, cover pan with oven paper and after that 5 minutes without oven paper
6 now...its ready!!!!!!!!!!!!!!!!!!!
